Chicken Turkey Truffle Salad
Description
This is a carnivore's salad with turkey bacon and chicken breast kicking up the protein content, plus a little touch of feta and egg if you account for the calories. Delicious. ;)

Put microgreens, spring salad mix, and tomatoes into a large bowl.

Heat a small nonstick saucepan and add olive oil.

Add shishito pepper and cook until soft.

Mix shishito peppers and turkey bacon into the greens mix.

Top with cooked chicken.

Drizzle with truffle oil and dressing.

Look for turkey bacon of 125 calories per 100 g. Turkey bacon can be cooked in the microwave for 4-6 minutes depending on the desired crispness or pan-fried. It should have an internal temperature of 165°F/74°C.
You may choose to add seasoning to the peppers as they cook; garlic, salt or powder, onion powder, or smoked paprika would pair well. Add some red pepper flakes for even more zip.
You can quickly increase the volume of the spring mix lettuce to make this a larger meal. Account for the increase in calories; however, spring mix is very low in calories, so you can easily enjoy a large volume.
