Maghrebi Shakshouka
Description
A Maghrebi dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion, and garlic, commonly spiced with cumin, paprika, and cayenne pepper -- shakshouka is a popular dish throughout North Africa and the Middle East. Enjoy!

Preheat the oven to 350F/180C.

Sauté the onion and peppers in an oven-proof pan sprayed with cooking oil until softened.

Add the garlic, cumin, and smoked paprika.

Add tomatoes and chili flakes to your preferred level of spice. Add a little salt and pepper to season.

Simmer for 5 minutes, then add the cherry tomatoes and continue to simmer for 8-10 minutes until the tomatoes start to soften.

Remove from heat, crack the eggs into the spicy tomato sauce, and place in the preheated oven for 8-10 minutes.

Remove from the oven, top with dollops of cottage cheese, and sprinkle with the parsley and enjoy.
