  1. Heat olive oil in a large heavy-bottomed soup pot over medium-high heat. Add onion and poblano pepper, and sauté until onion is translucent, 3 to 5 minutes. Add cabbage, garlic, salt and pepper, and cook until cabbage is wilted, about 2 minutes. Add rest of ingredients and bring soup to a boil.

  2. Cover pot and reduce heat to simmer until all ingredients are tender and cooked through, and flavors have combined, 20 to 25 minutes. Taste, and make any final adjustments to seasoning with salt and pepper. Remove bay leaf and ladle into bowls.
