A very berry PCOS-friendly breakfast great for one or the whole family.

Description

We're always on the lookout for simple, sweet, and satisfying breakfasts. This one can be dressed up with a sprinkling of erythritol on top or eaten as is with the sweetness of berries to carry you through. Want something for the family, add some toppings for the kids and eat all together. It's versatile and simply delicious.

Instructions

  1. Soak oat bran, chia seeds, cinnamon, and salt in warm water for 5 minutes.
  2. Preheat the oven to 350F/180C.
  3. Stir protein powder and yogurt into the oat bran mixture.
  4. Coat an 8x6in/21x17cm cake pan with nonstick cooking spray.
  5. Place the raspberries on the bottom of the pan and pour the oat bran mixture over the berries. Do not stir.
  6. Bake for 30-35 minutes or until golden brown.
  7. Top with brown erythritol and enjoy!

Even without erythritol! - great with strawberries and just a light dusting of erythritol

Very good. Subtle sweetness. Good with raspberries and blueberries. You can make this recipe for the family and offer syrup, whipped cream, or yogurt to those not counting calories to make it a family meal, although they're great without.

You can swap in your berries or choice, or mixed berries. You may also use frozen berries.
