Sweet Potato Beef Chili
Description
Sweet potatoes and lean ground beef are the base for this delicious chili. Onions, peppers, fire-roasted tomatoes, cumin, chili, and garlic bring up the rear. Shared with us by a bikini challenge coach, this was fast one of our favorites. Dig in, girls!

Place a pot over medium-low heat. Add oil, diced onion, diced pepper, and ground beef. Cook for 6-8 minutes, or until meat is cooked through.

Add chopped sweet potato, crushed tomato, broth, and spices to the pot. Boil for 25 minutes, or until the potatoes are soft.

Use a potato masher or whisk to slightly smash the potatoes, thickening the chili. Serve with cilantro on top.
