When zucchini & PCOS-friendly Shirataki noodles
Turkey Bacon Zoodles with Shirataki
Description
This recipe is so darn good. Zucchini noodles and Shirataki noodles are okay separately, but when paired together, the texture and bulk is magical! You're filling up on zucchini goodness but you've got that pasta feeling thanks to the Shirataki. Add copious amounts of turkey bacon protein and this one's a winner for the hungriest lady.

In a strainer, add zucchini noodles and a little salt. Let sit for 20 minutes to sweat out excess water.

Rinse the shirataki noodles well, let sit, and dry until ready to use.

In a pan sprayed with cooking spray, sauté the onions and turkey bacon. Add tomatoes and seasoning, cover until the tomatoes become soft.

Smash the tomatoes in the pan, add the zucchini and shirataki noodles, and mix until coated with sauce. Add a little water if the zucchini is too dry or if you would like a little soup. Adjust the seasoning to your liking. Let simmer until the desired tenderness of the zucchini is reached.

Note
If you’re not very hungry, eliminate the shirataki noodles.
Zucchini noodles can be found in the frozen veggie sections and are often offered in the fresh produce department. You can always make them yourself or simply slice the zucchini.
