Description

It looks like a lot of ingredients, but it's actually pretty simple to whip up. You go from stove top to oven and while it bakes, you have the time to combine all the homemade ranch dressing ingredients and simply stir. What a treat to taste buffalo wings sans the wings. Perfect for game night.

Ingredients

Cauliflower

Ranch Yogurt

Instructions

  1. Melt coconut oil in small saucepan over low heat. Whisk in hot sauce, brown sugar, and vinegar until combined. Remove from heat and cover to keep warm; set aside.

  2. Heat oven to 400°F / 204°C.  Line a rimmed baking sheet with parchment paper or grease with cooking spray.

  3. Combine psyllium husk, oat bran, ½ teaspoon salt, and ¼ teaspoon pepper in a small bowl. Whisk almond milk and hot sauce together in large bowl. Add cauliflower; toss to coat well. Sprinkle psyllium husk mixture over cauliflower; mix until thoroughly coated.

  4. Spray olive oil on a large frying pan over medium high heat. Add the cauliflower to the pan, browning and flipping until all sides are lightly browned. (Cauliflower will cook thryough in the oven.)

  5. Transfer ½ cup of buffalo sauce to a large bowl, add fried cauliflower and gently toss to coat. Spread cauliflower out on prepared baking sheet. Bake for 25-30 minutes, until soft. Serve immediately with yogurt dipping sauce and remaining buffalo sauce.

  6. Mix together all ingredients for yogurt dipping sauce. (mix the almond milk and vinegar together first before adding). Chill and serve with cauliflower.
