Description

Hot and toasty, right from the oven. This cauliflower au gratin is flavored with garlic, turkey bacon, and Parmesan cheese. You get that oven-cooked comfort food feeling, without the love handles.

Instructions

  1. Preheat the oven to 350 degrees F / 176 C.

  2. If using frozen cauliflower, boil, drain, and slice. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 2 minutes. Stir in the turkey bacon and sauté 2 minutes more. 

  3. Add the cauliflower and cook for 3 to 4 minutes. 

  4. Stir in the oat bran and then the almond milk. Blend well. Season with the cayenne and salt and pepper to taste. Heat to boiling and immediately remove from the heat. 

  5. Pour the cauliflower into a shallow baking dish. Top with the cheese and parsley. Bake until the top is lightly browned and bubbling, about 30 minutes. Serve immediately.
