Description

Spinach and egg whites are two of our favorite breakfast ingredients. They are elevated with just a sprinkling of feta. This omelet is fast and protein-packed. Enjoy!

Instructions

  1. Heat olive oil in a medium nonstick skillet over medium heat.

  2. Add baby spinach and a pinch of salt and cook until spinach wilts.

  3. Meanwhile, combine the egg whites and egg in a small mixing bowl with salt, freshly ground pepper and 1⁄2 teaspoon water, and beat with a fork until thoroughly combined. Pour the egg into the skillet, sprinkle the cheese on top, then turn the heat to low, cover, and cook 2-4 minutes or until the bottom of the omelet is set and the top is only slightly liquidy.

  4. Carefully flip the omelet and cook 1 more minute. Transfer to a serving plate and enjoy!
