When you're feeling like an eggy, cheesy, savory breakfast, this broccoli frittata has got your back. It's best made with fresh broccoli to avoid too much water. But if frozen is what you have, just cover the frittata with a lid and drain from time to time. Fat-free feta delivers on richness without too many calories.

  1. Heat oven to 350 degrees F / 176 C. Whisk eggs, egg whites, almond milk, and ½ teaspoon salt in a bowl until well combined.

  2. Heat oil in a large nonstick skillet over medium-high heat. Add broccoli, pepper flakes, and ¼ teaspoon salt; cook, stirring frequently, until broccoli is crisp-tender, 7 to 9 minutes. Add water, lemon zest, and lemon juice; continue to cook, stirring constantly, until broccoli is just tender and water has evaporated, about 1 minute longer.

  3. Add feta and egg mixture to the pan and cook, stirring and scraping the bottom of the skillet until large pieces form, about 30 seconds. Smooth into an even layer and cook, without stirring, for 30 seconds.

  4. Transfer skillet to the oven and bake until the frittata is slightly puffy and the surface bounces back when lightly pressed, 6 to 9 minutes. Loosen the frittata from the skillet and transfer to a cutting board. Let stand for 5 minutes before serving.
