Description

The can of tuna packs a healthy protein punch and goes down with you loving every bite when combined with a myriad of varying textures and flavors. From the crisp crunch of the celery, to the zip of kalamata olives and the zing or lemon and Dijon. Your taste buds won't get bored.

  1. Whisk shallot, garlic, mustard, lemon juice, salt, and pepper together in bowl. While whisking, slowly drizzle in sun-dried tomato oil until combined; set aside for 5 minutes.

  2. Toss sun-dried tomatoes and tuna with ½ tablespoon vinaigrette to coat. In separate bowl, toss lettuce with ½ tablespoon vinaigrette to coat, then season with salt and pepper to taste. Top with tuna mixture, beans, sliced celery, and olives. Drizzle with remaining 1 tablespoon vinaigrette and sprinkle with celery leaves. Serve.

Note

The vinaigrette is thick. If you prefer a thinner dressing, you can add a little balsamic vinegar. You can also add some olive oil, just be sure to account for the calories. Olive oil is high calorie. Enjoy!
