Description

We are partial to a good rice bowl, especially if it doesn't contain rice! Cauliflower rice serves as the base for flakey salmon, broccolini, asparagus, and a host of delicious Asian flavors.

  1. Slice the salmon into bite-sized pieces. Season with salt and pepper. 

  2. Heat 1 tablespoon olive oil in a large nonstick skillet over medium high. Add the salmon and cook 1 to 2 minutes per side. Transfer to a plate. 

  3. Add ginger, garlic, and the scallion whites and cook, stirring about 1 minute. Add the broccolini, asparagus and 2 tablespoons water and cook, stirring occasionally, 3 to 4 minutes. Transfer to another plate. 

  4. Add the remaining 2 tablespoons olive oil to the pan and heat over medium-high until simmering. Add the cauliflower rice, season with salt and cook, stirring occasionally 4 to 5 minutes. Reduce heat to medium, push the rice to one side and add the egg & egg whites to the empty side. Gently scramble until set, 1 to 2 minutes. 

  5. Return the vegetables and most of the reserved scallion greens to the skillet and toss. Stir in the Tamari and sesame oil. Gently fold in the reserved salmon and serve. Top with remaining scallion greens and hot sauce if desired.
