Description

Now that we've got the nutrition part out of the way, this recipe is really tasty. The peppers and savory flavorings lift our hero cabbage ingredient to a place of delight. Add in the varying textures of vegetables, tofu, and almonds -- you've got yourself a new favorite. We ate the same daily menu 4 days in a row and this cabbage dish was the one we looked forward to the most. Enjoy!

  1. Cut the tofu into cubes and dry with paper towels. In a small bowl, combine the stock, 1 tablespoon of the Tamari, the erythritol, rice wine vinegar, and the sesame oil. Remove 1 tablespoon to a small bowl and stir in the psyllium husk. Stir until it has dissolved. It will harden quickly. Don’t worry, even if it gets firm, it will mix into the meal in the end.

  2. Heat a large wok or skillet over high heat until good and hot. Add 1 tablespoon of the oil and coat the whole pan, then add the tofu and stir-fry until browned, about 3 minutes. Add 1 tablespoon Tamari, mix together for a few seconds, and transfer to a plate. 

  3. Add in the remaining tablespoon of oil, add the garlic and ginger to the wok and stir-fry briefly - about 10 seconds. Add the red pepper and stir-fry for just a few minutes, then add the cabbage. Stir-fry for 1 minute, add salt and pepper to taste, and stir-fry for another 1 to 2 minutes.

  4. Return the tofu to the wok, stir in the almonds and the stock Tamari sauce mixture and stir-fry to desired doneness. Stir in the psyllium husk mixture and stir-fry until the ingredients are slightly thickened and glazed. Remove from the heat and serve.
