Description

Cheesy lemon chicken pasta -- in the most health-building manner. Lemon zest brings the zing. Shirataki brings the flavor-absorbing basis. There's just no replacing parmesan every now and then. Pair with a large serving of veggies.

  1. In the morning, rinse the shirataki noodles thoroughly, then let stand in a colander to dry out as much as possible, all day. (You can also eat the shirataki right away. Up to you.)

  2. Cook the chicken breast in a pan sprayed with cooking spray over medium high heat. Cook on both sides until done then cut into small pieces and set aside. 

  3. Heat the olive oil in a skillet and add the lemon zest. 

  4. Add the almond milk to the olive oil and lemon zest mixture. Add the shirataki noodles, lemon juice, and chopped chicken. Stir until just heated through. Add the Parmesan and toss.
