Description

This chicken dish comes together pretty fast. We use fat-free, plain yogurt in place of sour cream, but the effect is the same - a creamy tasty texture that envelopes the chicken and keeps it moist while cooking. The chives, yogurt, and onion powder come together to bring the flavor while the panko provides a light crunch. What a tasty way to keep your muscles fed on your day off.

  1. Pat chicken dry, and season both sides with salt and pepper.

  2. In a medium bowl, stir yogurt, chives and 1 tablespoon onion powder together. Season with salt and pepper. Add the chicken and turn to coat. (Alternatively, marinate the chicken for up to 8 hours in the refrigerator, but let the chicken come to room temperature before cooking.)

  3. In a shallow bowl or plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.

  4. Line a plate with paper towels. Press each chicken breast into the panko, coating both sides with panko.

  5. Coat a large skillet with olive oil cooking spray over medium-high heat. Add the coated chicken to the pan and cook until golden brown, 3 to 5 minutes per side. Transfer to the paper towel-lined plate and sprinkle with salt. Repeat with remaining chicken, spraying the pan with cooking spray as needed. Serve chicken with more chives and lemon wedges.

Note

Pounding the chicken breasts thinner allows you to cook them through before the panko burns. It's not a must, but helpful.
