Description

They're deep. They're dark. You would not think you were getting any nutritional value at all. But you'll indulge and walk away with a smile. Not to mention your kids if they're joining you.

  1. Heat oven to 250 degrees F / 121 C.. 

  2. In a small bowl, whisk together egg, egg whites, and erythritol ‘sugars,’ 1 ¼ cups almond milk, yogurt, and the vanilla extract. 

  3. In a medium bowl, sift together oat bran, protein powder, cocoa powder, coffee powder, baking powder and salt. 

  4. Add the egg mixture to the flour mixture and whisk until combined. Add remaining almond milk if mixture is too thick. Fold in the chocolate chips let the mixture stand  for 10 to 15 minutes. 

  5. Heat a large pan over medium heat. Spray with the cooking spray and allow it to get hot. Drop ¼-cup portions of the batter onto the hot pan and cook until bubbles begin to rise to the surface, approximately 2 minutes, then flip and cook for another minute or two. As pancakes are ready, place them on a baking sheet and keep them warm in the oven. Take care not to cook too hot or they will get dark.

  6. Serve with raspberries if desired, and drizzled with 0-calorie, caramel sauce or pancake syrup, like Walden Farms. They’re also good plain.
