Description

This fish tastes rich like comfort food with the ghee and chicken broth combination. Thyme and lemon gives it depth. Nothing like delicious and healthy in the same dish.

  1. Pat fish fillets dry with paper towels. Sprinkle on both sides with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Reduce heat to medium and place fillets skin sides down.

  2. Cook fillets, until light golden brown, 4 to 5 minutes. Gently flip. Cook for 1 minute. Scatter ghee and chicken broth around the fillets. Spoon melted ghee sauce over fillets repeatedly for 15 seconds then let them cook without spooning butter for 15 seconds.

  3. Continue to alternate basting and cooking until fillets are cooked through. (Spooning ghee sauce on top will help cook the tops.)  Add garlic and thyme sprigs to the skillet. Total cooking time will range from 8 to 10 minutes

  4. Transfer fillets to plates. Top each fillet with thyme sprigs and ghee sauce, and serve with lemon wedges.
